Aluvi Riha (Potato Curry)

Ingredients

 500 g Potato (diced into about 1 inch pieces)
 1 can of tuna chunks/flakes (drained)
 3 tbsp tomato paste
 3 tbsp curry powder
 1 cup onion (thinly sliced)
 ½ cup curry leaves
 1 tbsp garlic (crushed)
 3 inch Rampa leaves (cut into ½ inch pieces)
 1/3 tsp cinnamon powder
 1 tsp ginger (grated)
 5 cardamom pods
 1 tbsp chili (chopped)
 1 cup coconut milk
 ½ cup coconut cream
 1 cup water
 2 tbsp vegetable oil
 Salt to taste

Directions

Boil the potato until well cooked (7 - 10 minutes)

Heat the oil

Over medium heat, sauté the onions, garlic, ginger, chili, cardamom, curry leaves and rampa leaves

Once the onions are browned, take a tablespoonful of the mixture and add to the coconut cream and leave aside

To the sautéed onion mixture in the pot, add the tomato paste, cinnamon powder and curry powder

Add the water gradually to mix everything into a smooth paste

Add the coconut cream gradually, while stirring to avoid clots

Add the potato and tuna

Cook over medium heat until it boils (stir regularly)

Once it boils, lower the heat, add the coconut cream with the sautéed onions and simmer for a few minutes and remove from stove.

Serve with roshi or rice
